Ingredients:

For the Stonies Flower-Infused Rice Vinegar:

  • 3.5 grams Stonies Flower (but save a nug to roll up and enjoy while you cook)
  • 1 cup rice vinegar

For the Sushi:

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 10 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/2 lb fresh sashimi-grade fish (such as tuna or salmon), thinly sliced
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions:

Step 1: Decarboxylate the Cannabis

  1. Preheat your oven to 240°F (115°C).
  2. Spread the 3 grams of Stonies Flower evenly on a baking sheet lined with parchment paper (remember to keep a nug aside for later).
  3. Bake for 40 minutes, stirring halfway through to ensure even decarboxylation. Allow the cannabis to cool.

Step 2: Make the Stonies Flower-Infused Rice Vinegar

  1. In a small saucepan, combine the decarboxylated Stonies Flower and 1 cup of rice vinegar.
  2. Simmer over low heat for 30 minutes, stirring occasionally.
  3. Remove from heat and let the mixture cool. Strain through a fine mesh strainer or cheesecloth to remove the plant material. Your infused rice vinegar is now ready to use.

Step 3: Prepare the Sushi Rice

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer the rice to a large bowl and let it cool slightly.

Step 4: Season the Rice

  1. In a small saucepan, combine the regular rice vinegar, sugar, and salt. Heat over low until the sugar and salt dissolve. Remove from heat.
  2. Stir in the Stonies Flower-infused rice vinegar. Pour the mixture over the warm rice and gently fold to combine. Allow the rice to cool to room temperature.

Step 5: Assemble the Rolls

  1. Place a sheet of nori on a bamboo sushi mat, shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  2. Arrange slices of avocado, cucumber, carrot, and fish horizontally across the center of the rice.

Step 6: Roll the Sushi

  1. Use the bamboo mat to roll the sushi tightly, starting from the bottom edge. Press firmly as you roll to ensure the roll is tight and secure.
  2. Use a sharp knife to cut the roll into 6-8 pieces. Repeat with the remaining ingredients.

Step 7: Enjoy and Elevate

  1. Arrange the sushi rolls on a serving platter and garnish with pickled ginger, wasabi, and soy sauce.
  2. Light up that nug you saved earlier and enjoy the fruits of your labor with a side of elevated vibes.
